This #rawvegan salad bowl was sooo flavorful😋 here I’ve got a lot of chopped lettuce (underneath), some raw shredded beet, sun dried tomatoes, onions, avocado and tasty #raw marinated mushrooms 🍄The dressing was a mix of tahini, coconut amino and Dijon mustard!! Soooo soo good!!
To make the marinated mushrooms I simply added some chopped mushrooms in a bowl as well as some apple cider vinegar, freshly squeezed lemon juice, olive oil, minced garlic, Chopped fresh parsley, Himalayan salt, dried basil and oregano. Mixed everything together and I let it sit in the fridge for at least 30 minutes (best when it’s made overnight or 24 hours in advance - it’s more flavorful). All the colors in this salad reflect the high nutrition of this bowl😍 So many vitamins, enzymes and minerals!! Love me some raw foods! Bring me so much energy🤸🏾‍♂️
Check out my stories to see how I used my food processor to shred the  raw beet (you can also use a blender but at low speed and for a short time so it doesn’t become a paste). I store this in the fridge for several days in an airtight container. Time saving in the kitchen👌🏽
