We're happy to release our latest batch of COLONEL TOBY today! Colonel Toby is our hoppy little farmhouse ale brewed in collaboration with The Kernel Brewery in London, England. We love simple, little, crisp, bitter, drinkable beers, and Colonel Toby fits this bill. Over the last few years, it has emerged as a favorite amongst our staff here at Jester King and garners excitement around the brewery when the new batch is released.

Our recent batch is 3.2% alcohol by volume and was packaged in early October. It will be available by the glass and in bottles to go (750ml/$9) at our tasting room and restaurant. We're also have a dish from our kitchen to pair with Colonel Toby this year. Chef Damien Brockway and his team have made beef tartare with Yorkshire Pudding!

Almost another journey around the sun. Tonight I’ll be gathering some of my closest friends in the NY beer scene and enjoying my Floodland collection with them. Friendships have eclipsed beer and I’m thankful for each one of them in one way or another. 
Most of you know how I feel about this brewery already...but to reiterate in short, they are making my favorite beer at the moment. I’ve taken a trip to Seattle to pick up bottles at the public sale and traded my heart out to make tonight happen. I don’t want to get into any beer politics on this post, just know that after the last few days, I support Adam and Floodland 1000 times more than ever before. Kudos on the phenomenal liquid and thank you to the long list of people who made tonight possible. ♥️

Just when you start to feel confident about the beers you’re making... leave it to a difficult homebrew batch and your own stupidity to knock you back down again.

This batch of brett pale ale proved very difficult to rack due to excessive hops and user error.  Instead of getting 10 bottles as expected we got 4.... and all 4 were splashed and aerated entirely too much. To top it all off I had previously misread the gravity going into bottles and it’s likely that if I were to leave these beers at room temp too long I’d have a potential explosion or at the very least some serious gushing bottles.

It’s been over a week since I took these pics and initially I didn’t want to share this experience. However, I think it’s important that people are open and honest about both their successes and their failures. Transparency is important.

The fact is... despite all the collaborations and upcoming barrel releases... AltBrau is still (for now) a homebrew project. That means that most of the beers I make are not with professional grade equipment in an industrial space designed for efficiency. I brew in an Oakland apartment on a stovetop 1 to 3 gallons at a time with no temperature control during fermentation. As for my abilities as a brewer... well... I have a lot to learn. But I’m also lucky to be surrounded by professionals who always make themselves available even when they are busy.

Experiences like these make me realize how important it is to check your ego. It’s ok to ask for assistance once in a while, and when the time comes for AltBrau to take the next step into having our own commercial space I will definitely be bringing in some help to bring my ideas to life.

With all that said... I popped one of the bottles with a couple friends during my next brewing session and I was shocked how good the beer was. Those other three will go into the refrigerator to slow down any potential over-carbing and I look forward to drinking them with company.

Easily one of my favourite places we visited in Bristol was @wbwappingwharf . I have been a huge lover and advocate of @wildbeerco for some time now and the Wild Beer bar did not disappoint. Such an awesome selection of beers, welcoming and knowledgeable staff and stunning food. Winning combination all round!

On a side note, this is my 300th post so chose this picture as it shows my biggest achievement since starting my Instagram beer adventures. Alfie is now 4 months old and becomes more amazing each day. He is the coolest person I have ever met and appears growing an increasing love for being in pubs (which is lucky!)

Tepache – Wild Beer (United Kingdom)
Last year at Tilquin English Beer Festival I had a glass from Tepache. I wasn’t really impressed by this beer, until now! I found this at my local beerstore and wanted to give it another try. This time I enjoyed it, a lot! I’m not sure if this is from the same batch. But the beer has evolved in a very positive way. Since this is a temporary beer I think it aged about a year. It’s amazing to taste the evolution of flavors.

Tepache pours hazy amber, a small light beige, shortlasting head appears.

In the nose a spicy, slightly fruity and funky brettanomyces fragrance. The used cloves and cinnamon are very noticeable. Underneath some fruits break through, think of peach and a hint of caramelized pineapple.

From the very first sip, the beer reminds me of biscuit with pineapple. Strange combination maybe, but super nice. The spiciness that was very present in the fragrance disappears in the mouth in the background. There is only a hint of cinnamon and cloves. The fruits that carried the undertone in the nose is now in the foreground. The spotlight is aimed at peach, apricot and a slice of caramelized pineapple. During the brewing of the beer, dark Muscavado sugar was used to lightly sweeten it, this sugar is light brown and contributes to the impression of caramel. Hence the caramelized pineapple in the nose. Underlying a notion of wood. Maybe this impression comes from the mixed fermentation. The beer starts medium sour in the mouth and ends with a mediocre sweetness in the aftertaste. Mouth feel is light and thin. The pineapple aroma sticks for a little bit and provides a fresh touch in the fairly sweet and short aftertaste.
